People with diabetes must constantly monitor their diet. The nutrition of such people should be low in carbohydrates and lack of sugar. But does this mean that baking them is fully prohibited? In fact, there are tons of pies for diabetics that are easy to make at home. What are these recipes?
First of all, you should responsibly approach the selection of ingredients for making the dough. Unsweetened foods such as nuts, pumpkin, blueberries, cottage cheese, apples and so on are ideal as fillings.
Basic diet recipe
First, itโs important to make a suitable pie for the diabetic. Those suffering from this disease should avoid regular baking, as it most often contains too many refined carbohydrates - white flour and sugar.
For example, shortcrust pastry contains about 19-20 grams of carbohydrates per slice, not counting any added toppings. In other types of baking, this indicator can vary, starting from 10 grams per piece and above. In addition, such a dough often contains little or no fiber, which does not greatly reduce the amount of refined carbohydrates, if any.
In addition, you need to be very careful when choosing the filling. For example, pastries filled with dried apricots and raisins can increase your blood sugar very much.
However, there are a number of pies for diabetics that you can afford. The main rule of such recipes is that the amount of harmful carbohydrates should be no more than 9 grams per serving.
Cooking a low-carb pie base

- 10-15 drops of Stevia liquid extract (more if you like);
- parchment (baking) paper.

Preheat the oven to 175 ยฐ C. Put all the ingredients in the bowl of the food processor (using the mixer element) and mix for one to two minutes to combine everything. When all the components are combined, they will look like a liquid mixture. But as the flour absorbs the liquid, it swells, and the dough begins to thicken slowly. If the mixture sticks to the side walls of the bowl, remove the lid and use a spatula to scrape it off. Once all the ingredients are well mixed, you should get a thick sticky dough.
Line a baking dish with a diameter of 26 cm with parchment paper. Remove the sticky dough from the bowl of the food processor and place it in the prepared dish. Moisten your hands with water so that they do not stick to the dough, then with your palm and fingers evenly spread it along the bottom of the mold and along the edges. This is a bit complicated process, so just take your time and evenly distribute the mixture. When you are sure that the base is smooth enough, use a fork to make a few punctures all over the surface.
Place the mold in the oven on the middle rack for 25 minutes. The product will be ready when its edges turn golden. Remove from oven and let cool before removing parchment paper. So you get a ready-made base pie for diabetics.
This workpiece can be stored in the refrigerator for up to 7 days, so you can make it in advance and refrigerate. In addition, it can be placed in the freezer for up to three months. You do not even need to defrost it. Just add the filling and put in the oven at the right time.
If you intend to use a filling that requires a long heat treatment, reduce the baking time of the base to ten minutes. Then, if necessary, you can bake it again for another thirty minutes.

To make an apple pie for diabetics, you will need one or two servings of raw dough prepared according to the above instructions:

- one and a half Art. tablespoons vanilla extract;
- 4 l Art. unsalted butter;

- 1 liter Art. flour;

Melt the butter in a pan. Add vanilla extract, flour and cinnamon and mix well. Put apple slices in the same place, stir well so that they are covered with a mixture of butter and vanilla. Pour the liquid stevia extract onto the mixture. Stir again, add a little water and cook the apples on low heat for five minutes. Remove the pan from the heat.
Place the first batch of dough in the base of the baking dish. Press it to the bottom and edges. If you are using a preformed base, you can skip this step. Put the stuffing in it. Decide whether you want to add a second portion of the dough up or whether you will bake an open diet cake for diabetics.
If you want, put a second layer of dough on top. Squeeze the edges to seal the filling inside the product. Be sure to make a few cuts in the upper part to ensure air flow to the filling, as well as steam output during cooking.
To decorate the cake, you can do the following. Roll the second part of the dough into a thin layer. Place it for a while in the freezer directly on a baking sheet or a sheet of parchment paper so that it ceases to be soft and sticky. The amount of time may vary depending on what your oven settings are. Preliminary preparation of apples, indicated in the previous step, allows you to bake the product less time, since the fruit will already be softened.

Pumpkin pie
This is a good pie recipe for type 2 diabetics. Pumpkin filling, sweetened with stevia, is very tender. You can serve such a product just for tea, as well as offer it at the festive table. You can use this recipe for those who, for whatever reason, avoid the use of sugar. To prepare this treat, you will need the following:
- 4 large eggs;
- 840 grams of pumpkin puree;
- half a glass of granular stevia;
- 2 l including ground cinnamon;
- half a liter including ground cardamom;
- a quarter of l h. ground nutmeg;
- one liter including sea salt;
- a glass of whole milk;
- several halves of pecans for decoration;
- 2 servings of dough prepared according to the above recipe.
How to make a diabetic pumpkin pie?
Preheat the oven to 200 ยฐ C in advance and line the baking dish with parchment. Put the frozen dough piece in it. Place in the refrigerator while you are filling.
Beat eggs and sugar with a mixer for one minute, until they become bright and lush. Add pumpkin puree, cinnamon, cardamom, nutmeg and salt and continue whisking for another minute. Pour in milk and mix vigorously until a completely homogeneous mass is obtained. It takes about thirty seconds. Pour the mixture into a chilled pie base.
Bake the product for ten minutes at 200 ยฐ C, then reduce the heating to 170 ยฐ C and continue to bake the cake for one hour (or until its middle is no longer liquid). If the edges of the dough start to burn, cover them with foil.
Remove the cake from the oven and decorate the outside with pecan halves. Create a simple flower pattern in the center with these nuts. It will turn out very nice and tasty.

- 1/8 l including salt;
- 1 liter Art. flour;

- a glass of natural (without sugar) thick peanut butter;
- 1 liter Art. honey;
- one and a half glasses of unsweetened rice flakes fried in the oven;
- a bag of gelatin (sugar free);
- a package of diabetic toffee (approximately 30 grams);
- 2 cups skim milk;
- ground cinnamon, optional.
How to cook a diabetic cake without baking?
Mix a quarter cup of peanut butter and honey in a small bowl, place in the microwave. Heat at high power for thirty seconds. Shuffle to combine these components. Add rice flakes and mix again. Using waxed paper, extrude this mixture into the base of a round baking dish. Place in the freezer while preparing the filling.
Soak the gelatin in a few tablespoons of milk. Pour the remaining milk into a deep bowl, put the toffee in it and completely melt them, placing the mixture in the microwave in several stages for 40-50 seconds. Add peanut butter, microwave again for thirty seconds. Pour the mixture of gelatin with milk, mix everything thoroughly. Cool to room temperature. Pour this mixture into the frosted pie base. Refrigerate until completely frozen.
