To make almond crackers you will need (70 pieces):





  • approximately 200 grams of almonds (peeled). In order for the almonds to be easily peeled, they need to be dipped in boiling water for about 10 minutes;
  • 400 grams of flour;
  • four eggs;
  • one glass of sugar;
  • three tablespoons of vanilla sugar ;
  • half a bag of baking powder or half a teaspoon of soda;
  • one lemon (zest);
  • a pinch of salt;
  • butter (in order to lubricate the mold).

The process of making almond crackers:





  1. In a frying pan without oil, fry the almonds.
  2. We take three proteins, add salt and beat in foam.
  3. Three yolks are mixed with regular and vanilla sugar, and then whipped proteins are added to this mixture (this must be done gradually and constantly stirring).
  4. Then add the zest of lemon (grated) to the resulting mass, almonds and mix well.
  5. Then add baking powder and flour. If instead of a powder you take soda, then you first need to extinguish it with lemon juice. Mix again.
  6. If the dough seems very soft to you, you can add more flour.
  7. Preheat the oven to a temperature of 175 degrees.
  8. We roll the dough into two rolls with a diameter of about two centimeters and put on a baking sheet, oiled.
  9. At the same time, beat one egg and a little sugar and grease the rolls.
  10. Then put the pan in the oven for about 35 minutes.
  11. Rolls still hot need to be cut into pieces about one centimeter thick.

Cooking macaroons will take you about an hour. But as a result of your hard work, you will get tasty crackers with a small calorie content.
